  • 1 cup (240ml) milk
  • 1/2 cup (120ml) sour cream
  • 2 cups (300g) frozen mixed vegetables (peas, carrots, corn, green beans)
  • 1 cup (120g) shredded cheddar cheese
  • Salt and pepper to taste
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1 sleeve Ritz crackers or about 1 cup breadcrumbs
  • 1/4 cup (60g) butter, melted

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 9×13-inch casserole dish lightly with cooking spray.
  2. In a mixing bowl, whisk together cream of chicken soup, milk, sour cream, garlic powder, paprika, salt, and pepper until smooth.
  3. Fold in shredded chicken and frozen mixed vegetables until evenly combined.
  4. Pour the mixture into the prepared casserole dish, spreading it out evenly.
  5. Sprinkle shredded cheddar cheese over the top.
  6. Crush Ritz crackers or breadcrumbs in a small bowl and mix with melted butter. Sprinkle the mixture evenly over the cheese layer.
  7. Bake the casserole in the preheated oven for 30-35 minutes, or until bubbly and the topping is golden brown.
