Instructions

  1. Preheat your oven to 350°F (175°C). Line your baking pan with parchment paper, leaving a bit of overhang on the sides for easy removal.
  2. In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are evenly coated and resemble wet sand. Press the mixture firmly into the bottom of your prepared pan to create an even layer. Bake for 8–10 minutes, then set aside to cool slightly.
  3. In a large mixing bowl, beat the cream cheese and sugar until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract. Pour the cheesecake mixture over the cooled crust, spreading it out evenly.
  4. In a small bowl, mix the melted butter, brown sugar, cinnamon, and flour until combined. Drop spoonfuls of the mixture over the cheesecake layer and use a toothpick or knife to swirl it gently into the batter.
  5. Place the pan in the oven and bake for 25–30 minutes, or until the edges are set and the center is just slightly jiggly. Remove from the oven and let cool completely at room temperature.
  6. Once cooled, refrigerate the bars for at least 2 hours (or overnight) to firm up completely.
  7. Lift the bars out of the pan using the parchment paper overhang. Slice into squares and drizzle with icing, if desired, before serving.
