A creamy, peanut buttery frozen treat that melts in your mouth, packed with protein and wholesome ingredients. Perfect for hot summer days, post-workout snacks, or guilt-free desserts.

  • 1 cup Greek yogurt (plain, full-fat or low-fat)
  • 1/2 cup peanut butter (smooth and unsweetened)
  • 23 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract (optional)
  • 1/4 cup dark chocolate chips (optional)
  • 2 tablespoons chopped nuts (optional, almonds or pecans)
  • A pinch of sea salt (optional)

Instructions

  1. In a medium-sized mixing bowl, combine Greek yogurt, peanut butter, honey, and vanilla extract. Stir until smooth and fully combined.
  2. Fold in dark chocolate chips or chopped nuts if desired.
  3. Prepare ice cube tray or silicone molds. If using cupcake liners, place them in a muffin tin.
  4. Scoop the mixture into molds using a small spoon, filling each to the top. Smooth the surface with the back of the spoon.
  5. Optional: Sprinkle a pinch of sea salt on top of each bite.
  6. Place molds in the freezer and chill for 2-3 hours, or until firm.
  7. Pop bites out of molds once frozen. If using cupcake liners, peel them off.
  8. Store bites in an airtight container in the freezer for up to two weeks. Let them sit at room temperature for 2-3 minutes before enjoying.
