Silky, rich mashed potatoes with mellow, sweet roasted garlic flavor. Easy enough for weeknights, special enough for holidays.

  • 2 pounds russet potatoes, peeled and cut into chunks
  • 2 whole garlic heads, roasted until golden and soft
  • 4 tablespoons unsalted butter, softened
  • 1/2 cup heavy cream, warmed
  • 1/4 cup whole milk, warmed
  • Salt to taste (start with about 1 teaspoon)
  • Freshly ground black pepper to taste
  • Fresh chives or parsley, finely chopped (optional, for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Slice off the top 1/4 inch of each garlic head to expose cloves. Drizzle a teaspoon of olive oil over each, wrap tightly in foil, and roast for 35-40 minutes until cloves are golden and soft.
  2. Peel and chop russet potatoes into 1.5-inch chunks. Place in a large pot, cover with cold water by an inch, add a pinch of salt, and bring to a boil. Reduce heat and simmer for 15-20 minutes until fork-tender.
  3. Drain potatoes well and let sit in colander for 1-2 minutes to release excess steam.
  4. Let roasted garlic cool slightly, then squeeze softened cloves out of skins into a bowl.
  5. Mash potatoes using a ricer or masher. Stir in roasted garlic cloves, softened butter, warmed heavy cream, and milk. Mix gently until smooth and creamy. Season with salt and freshly ground black pepper to taste.
  6. Fold in fresh chopped chives or parsley if using.
  7. Serve immediately. To hold, cover with foil and keep warm in oven at 200°F (95°C) for up to 30 minutes.

Notes

Use room temperature butter and warm cream to keep mash fluffy. Avoid overboiling potatoes to prevent gummy texture. Roasting garlic properly is key for mellow sweetness. For dairy-free version, substitute vegan butter and coconut cream. Add warm chicken broth instead of milk for extra depth in winter.
