  • 4 cloves fresh garlic, minced
  • 1 large onion, diced
  • 16 oz baby bella or white button mushrooms, sliced thinly
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons all-purpose flour
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish (optional)

Instructions

  1. Melt 2 tablespoons of butter in a large soup pot over medium heat.
  2. Add 1 large onion (diced) and 4 cloves of garlic (minced). Sauté until softened and fragrant, about 3-5 minutes.
  3. Stir in 16 oz of sliced mushrooms. Cook for 8-10 minutes, stirring occasionally, until mushrooms are browned and have released their juices.
  4. Sprinkle 2 tablespoons of all-purpose flour over the mixture. Stir well and cook for 1-2 minutes to eliminate any raw flour taste.
  5. Gradually pour in 4 cups of vegetable broth, whisking continuously to prevent lumps. Bring to a gentle simmer.
  6. Reduce heat to low and stir in 1 cup of heavy cream. Allow the soup to simmer for 5-7 minutes, stirring occasionally.
  7. Season with salt and pepper to taste. Add more garlic if desired for a stronger flavor.
  8. Optional: Use an immersion blender to blend the soup partially for a smoother texture while leaving some mushroom pieces intact.
  9. Serve hot, garnished with fresh parsley and a drizzle of cream, if desired.
