  • 6 cups (1.5 liters) chicken broth
  • 1/2 cup (95g) white rice or orzo
  • 3 large eggs
  • Juice of 2 fresh lemons (about 1/4 cup or 60ml)
  • 1 teaspoon lemon zest
  • 1 cup (150g) shredded cooked chicken (optional)
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Bring 6 cups (1.5 liters) of chicken broth to a simmer in a large pot over medium heat.
  2. Add 1/2 cup (95g) of white rice or orzo to the broth. Stir occasionally and cook for 10-12 minutes until tender.
  3. While the rice is cooking, crack 3 large eggs into a medium bowl and whisk until frothy.
  4. Add the juice of 2 fresh lemons (about 1/4 cup or 60ml) and 1 teaspoon of lemon zest to the eggs. Whisk until well combined.
  5. Once the rice is cooked, lower the heat to medium-low and remove about 1 cup (240ml) of hot broth from the pot.
  6. Slowly pour the hot broth into the egg-lemon mixture while whisking constantly to temper the eggs.
  7. Gradually pour the tempered egg mixture back into the pot, stirring continuously to create a creamy, velvety texture.
  8. Add shredded cooked chicken (about 1 cup or 150g) if desired, and season the soup with salt and pepper to taste.
  9. Simmer for 2-3 minutes, but do not boil, as this can curdle the eggs.
  10. Ladle the soup into bowls and garnish with chopped fresh parsley. Serve immediately and enjoy!
