  • 1 clove fresh garlic, minced finely
  • 1 tablespoon (15 ml) freshly squeezed lemon juice
  • 2 tablespoons fresh herbs (dill and parsley), chopped finely
  • ¼ teaspoon freshly ground black pepper (optional)
  • Pinch of sea salt

Instructions

  1. Prep Ingredients (5 minutes): Soften the cream cheese by leaving it at room temperature for about 30 minutes beforehand. Mince the garlic finely and chop the fresh herbs into small pieces. Squeeze fresh lemon juice and measure out your olive oil.
  2. Grind the Feta (3-5 minutes): Place the feta cheese in your food processor or blender. Pulse until it’s finely ground but not completely liquefied—you want a creamy, slightly textured base. If using a blender, pulse gently to avoid over-processing.
  3. Add Cream Cheese and Yogurt (2 minutes): Add the softened cream cheese and Greek yogurt to the feta. Blend again until the mixture is smooth and creamy. Stop and scrape down the sides with a spatula as needed to make sure everything gets evenly mixed.
  4. Incorporate Flavorings (2-3 minutes): Add the minced garlic, lemon juice, and olive oil (reserve a little for drizzling). Pulse or blend briefly to combine. At this stage, the dip should be thick yet spreadable.
  5. Mix in Herbs and Seasonings (1 minute): Transfer the mixture to a bowl, then fold in the chopped herbs, black pepper, and a pinch of sea salt. Taste and adjust seasoning—remember feta is salty, so go easy on salt.
  6. Chill and Serve (30 minutes recommended): For best flavor, cover and refrigerate the dip for at least half an hour. This resting time lets the flavors marry and the texture firm up slightly. Before serving, give it a gentle stir and drizzle with a bit more olive oil.
