  • 1 pound ground beef (lean or regular)
  • 2 tablespoons unsalted butter, softened
  • 3 cloves garlic, minced
  • 1 medium onion, finely chopped
  • 8 ounces cream cheese, softened
  • 1 cup sour cream
  • 1 cup beef broth (low sodium preferred)
  • 1 cup shredded sharp cheddar cheese
  • ½ cup freshly grated Parmesan cheese
  • 1 tablespoon Worcestershire sauce
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon Italian seasoning (optional)
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add spaghetti and cook according to package instructions until al dente, about 9-11 minutes. Reserve ½ cup pasta water before draining. Drain pasta and set aside.
  2. While pasta cooks, heat a large skillet over medium-high heat. Add ground beef, breaking it up with a spoon. Cook until browned and no longer pink, about 6-8 minutes. Drain excess fat if needed.
  3. Add butter, minced garlic, and chopped onion to the skillet. Cook, stirring often, until onions are translucent and garlic is fragrant, about 4 minutes. Avoid burning the garlic.
  4. Lower heat to medium. Stir in softened cream cheese until melted and smooth. Add sour cream and beef broth, stirring constantly to combine until sauce is velvety and rich.
  5. Stir in Worcestershire sauce, Italian seasoning (if using), salt, and pepper to taste. Let sauce simmer gently for 3-4 minutes until slightly thickened. Add reserved pasta water if sauce is too thick.
  6. Stir in shredded cheddar cheese and grated Parmesan cheese until fully melted and sauce is creamy and smooth.
  7. Add cooked spaghetti to the skillet, tossing gently to coat every strand with sauce. Add more pasta water a tablespoon at a time if needed to reach desired consistency.
  8. Taste and adjust seasoning with salt and pepper if necessary. Garnish with chopped fresh parsley before serving.

Notes

Do not overcook spaghetti; al dente is best. Soften cream cheese before adding to avoid lumps. Avoid overcrowding the pan when browning beef for better caramelization. Reserve pasta water to adjust sauce consistency. Taste and adjust seasoning gradually to avoid over-salting.
