  • 2 tablespoons (30g) unsalted butter
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons (15g) all-purpose flour
  • 4 cups (1 liter) vegetable broth, low-sodium preferred
  • 1 cup (240ml) heavy cream
  • 1 teaspoon dried thyme or a few sprigs of fresh thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)
  • Grated Parmesan cheese for serving (optional)
  • 1/4 cup (60ml) white wine for deglazing the pan (optional)

Instructions

  1. Prepare ingredients by slicing mushrooms, finely chopping the onion, and mincing the garlic.
  2. Heat butter and olive oil in a large pot over medium heat. Sauté onions and garlic for 3-4 minutes until softened and fragrant.
  3. Add sliced mushrooms to the pot and cook for 8-10 minutes, stirring occasionally, until mushrooms release moisture and begin to brown.
  4. Sprinkle flour over the sautéed vegetables and stir until mushrooms are evenly coated. Cook for 1-2 minutes to remove the raw taste of the flour.
  5. Gradually pour in vegetable broth, stirring constantly to create a smooth consistency. Add thyme, salt, and pepper. Bring to a gentle boil, then reduce heat to low and simmer for 10 minutes.
  6. If using white wine, add it now to deglaze the pot and enhance flavor.
  7. Use an immersion blender to puree the soup until smooth and creamy. For a chunkier texture, blend only half the soup.
  8. Stir in heavy cream and let the soup simmer for another 5 minutes. Taste and adjust seasoning as needed.
  9. Serve hot, garnished with chopped parsley and grated Parmesan cheese, if desired.
