  • 4 cups frozen peas (about 600g / 21 oz)
  • 1 cup fresh mint leaves loosely packed (about 20g / 0.7 oz)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable stock (1 liter / 4.2 cups)
  • ½ cup crème fraîche (120 ml / ½ cup) – substitute with Greek yogurt for lighter twist
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 tablespoon lemon juice (optional)

Instructions

  1. Heat 2 tablespoons of olive oil in a medium to large saucepan over medium heat. Add the finely chopped onion and sauté for about 5 minutes until translucent and soft.
  2. Add the minced garlic and cook for another 30 seconds until fragrant, being careful not to let it brown.
  3. Pour in the frozen peas and vegetable stock. Bring the mixture to a gentle boil, then reduce the heat and let it simmer for 10 minutes.
  4. Remove the pot from heat and add the fresh mint leaves. Let them steep in the hot soup for a few minutes.
  5. Using an immersion blender, puree the soup right in the pot until smooth and creamy. For an ultra-smooth texture, pass the soup through a fine mesh sieve.
  6. Stir in ½ cup of crème fraîche. If the soup is too thick, add a splash of water or stock to reach desired consistency.
  7. Season with salt and freshly ground black pepper. Add a squeeze of lemon juice to brighten the flavors.
  8. Ladle the soup into bowls and garnish with an extra swirl of crème fraîche and a few fresh mint leaves. Serve immediately.

Use fresh peas when in season for brighter flavor. Substitute crème fraîche with Greek yogurt or coconut cream for dairy-free options. Add lemon juice and salt at the end to enhance flavors.
