A quick and easy minty fudge made with just three ingredients, delivering a creamy texture and nostalgic Shamrock Shake flavor perfect for St. Patrick’s Day or any festive occasion.

Ingredients

Scale
  • 12 oz (340g) white chocolate chips or chopped white chocolate
  • 14 oz (396g) can sweetened condensed milk
  • 1 to 1.5 teaspoons mint extract or Shamrock Shake mix
  • Optional: a few drops of green food coloring

Instructions

  1. Line an 8×8-inch (20×20 cm) baking pan with parchment paper, allowing some overhang for easy fudge removal.
  2. Place 12 oz (340g) of white chocolate chips or chopped white chocolate into a microwave-safe bowl. Heat in 30-second bursts, stirring well between each until smooth and fully melted, about 3-5 minutes. Alternatively, melt using a double boiler on low heat, stirring constantly.
  3. Pour the entire 14 oz (396g) can of sweetened condensed milk into the melted chocolate. Stir gently but thoroughly until the mixture is uniform and glossy, about 1-2 minutes.
  4. Stir in 1 to 1.5 teaspoons of mint extract or Shamrock Shake mix. If desired, add a few drops of green food coloring and mix well. Be cautious not to add too much mint extract.
  5. Pour the mixture into the prepared baking pan, smoothing the top evenly with a spatula. Tap the pan lightly on the counter to release any air bubbles. Let it cool to room temperature for about 15 minutes.
  6. Transfer the pan to the refrigerator and chill for at least 2 hours or until firm. For best results, chill overnight.
  7. Use a sharp knife warmed under hot water and dried to slice the fudge into small squares.

Notes

Melt white chocolate slowly to avoid graininess or burning. Use premium white chocolate brands like Ghirardelli or Lindt for best results. Measure mint extract carefully to avoid overpowering flavor. Use parchment paper for easy removal and clean cuts. Store fudge refrigerated in an airtight container for up to 2 weeks or freeze for up to 3 months. Warm knife before slicing to prevent cracking.
