  • 1/2 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon chopped fresh chives (optional)
  • Butter or cooking spray for greasing muffin tin

Instructions

  1. Preheat your oven to 325°F (163°C). Grease your muffin tin generously with butter or cooking spray.
  2. Cook and chop bacon: Fry the bacon slices in a skillet over medium heat until crispy, about 8 minutes. Drain on paper towels and chop into small pieces. Set aside.
  3. In a blender or food processor, combine 6 large eggs, 1/2 cup cottage cheese, 1/4 cup whole milk, 1/2 teaspoon salt, 1/4 teaspoon black pepper, 1/2 teaspoon onion powder, and 1/4 teaspoon garlic powder. Pulse until smooth and creamy, about 30 seconds.
  4. Transfer the blended egg mixture to a bowl. Fold in 1/2 cup shredded cheddar, 1/4 cup shredded Gruyère (if using), chopped bacon, and 1 tablespoon chopped fresh chives. Stir gently but thoroughly.
  5. Pour the egg mixture evenly into the prepared muffin tin cups, filling about 3/4 full to allow rising (makes 6 servings).
  6. Bake for 25–30 minutes, or until the eggs are set and tops are slightly golden. A toothpick inserted into the center should come out clean.
  7. Let the egg bites cool in the tin for 5 minutes before carefully removing. Serve warm or store for later.
