  • 4 oz cream cheese, softened (about 115g)
  • 1/2 cup sour cream (120ml)
  • 1/4 cup mayonnaise (60ml)
  • 12 chipotle peppers in adobo sauce, minced
  • 1 clove garlic, minced
  • 2 tablespoons fresh lime juice (30ml)
  • 2 tablespoons fresh cilantro, chopped (optional)
  • 1/4 cup grated cotija cheese (about 30g)
  • Salt and black pepper to taste

Instructions

  1. Heat a large skillet over medium-high heat. Add 3 cups of fresh or thawed corn kernels. Cook, stirring occasionally, until the corn is lightly charred and fragrant, about 8-10 minutes.
  2. In a medium bowl, combine 4 oz softened cream cheese, 1/2 cup sour cream, and 1/4 cup mayonnaise. Stir until smooth and creamy.
  3. Add 1-2 minced chipotle peppers, 1 minced garlic clove, and 2 tablespoons fresh lime juice to the creamy mixture. Season with salt and pepper to taste and stir well.
  4. Fold the roasted corn into the creamy mixture. Add 2 tablespoons chopped cilantro and 1/4 cup grated cotija cheese. Stir gently to combine, keeping some texture.
  5. Cover and refrigerate the dip for at least 30 minutes to let flavors meld. Stir before serving and serve with tortilla chips, veggies, or as a topping for grilled meats.

Notes

Roasting the corn properly is key for smoky flavor. Soften cream cheese before mixing. Adjust chipotle peppers to control heat. Chill dip for at least 30 minutes for best flavor. Stir in milk or lime juice if dip is too thick after chilling.
