  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs (100g)

  • For the Bang Bang Sauce:
  • ½ cup mayonnaise (120g), regular or light
  • 3 tablespoons sweet chili sauce (45g)
  • 1 to 2 teaspoons sriracha or favorite hot sauce (5-10ml), adjusted to heat preference
  • 1 teaspoon honey or sugar (5ml)
  • 1 teaspoon rice vinegar or lime juice (5ml)

Instructions

  1. Rinse the shrimp under cold water, then pat completely dry with paper towels.
  2. In a shallow bowl, combine all-purpose flour, cornstarch, salt, and pepper; stir well.
  3. In a separate bowl, whisk the eggs until smooth.
  4. Place the panko breadcrumbs in a third shallow bowl; optionally add a pinch of paprika or garlic powder.
  5. Working in batches, dip each shrimp first into the flour mixture, then into the beaten eggs, and finally into the panko crumbs, pressing gently to ensure coating sticks. Place coated shrimp on a plate or baking sheet.
  6. Preheat the air fryer to 400°F (200°C) for 3-5 minutes.
  7. Spray the air fryer basket lightly with cooking spray. Arrange shrimp in a single layer without overcrowding. Spray shrimp lightly with cooking spray.
  8. Air fry shrimp for 6-8 minutes, flipping halfway through, until golden and crispy and shrimp are opaque and firm.
  9. While shrimp cooks, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar in a small bowl until smooth. Adjust heat or sweetness to taste.
  10. Transfer cooked shrimp to a large bowl, pour bang bang sauce over, and gently toss until evenly coated. Serve immediately with lime wedges or over a bed of lettuce.

Dry shrimp thoroughly before coating to ensure crispiness. Avoid overcrowding the air fryer basket to prevent soggy shrimp. Flip shrimp halfway through cooking for even browning.
