  • 1 tsp lime juice
  • 2 cups shredded green cabbage
  • 1 cup shredded red cabbage
  • 1 medium carrot, shredded
  • 2 tbsp mayonnaise
  • 1 tbsp sriracha
  • 1 tsp apple cider vinegar
  • Salt and pepper to taste
  • 6 small corn or flour tortillas
  • Fresh cilantro leaves (optional)
  • Lime wedges

Instructions

  1. Pat the shrimp dry with paper towels.
  2. In one bowl, mix flour, garlic powder, smoked paprika, salt, and pepper.
  3. In another bowl, beat the egg.
  4. In a third bowl, place the panko breadcrumbs.
  5. Dip each shrimp first into the flour mixture, shaking off excess, then into the beaten egg, and finally into the panko breadcrumbs to coat evenly.
  6. Preheat the air fryer to 400°F (200°C).
  7. Arrange shrimp in a single layer in the air fryer basket.
  8. Cook for 4-5 minutes, flip shrimp, and cook another 4-5 minutes until golden and crispy.
  9. While shrimp cooks, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and lime juice to make the bang bang sauce.
  10. In a medium bowl, combine shredded green and red cabbage with shredded carrot.
  11. Mix mayonnaise, sriracha, apple cider vinegar, salt, and pepper in a small bowl, then toss with the cabbage mixture to make the sriracha slaw.
  12. Warm tortillas in a dry skillet or microwave until soft and pliable.
  13. Spread a spoonful of bang bang sauce on each tortilla.
  14. Top with crispy shrimp, a generous heap of sriracha slaw, and fresh cilantro if using.
  15. Squeeze lime over the top before folding and serving.
