  • 1/2 cup crumbled blue cheese (firm, small-curd preferred)
  • 1 tablespoon fresh lemon juice or white vinegar
  • Salt and black pepper to taste

Instructions

  1. Pat the chicken wings dry thoroughly with paper towels to remove excess moisture.
  2. Place wings in a large mixing bowl.
  3. Sprinkle 1 tablespoon baking powder and 1 teaspoon salt evenly over the wings and toss well to coat.
  4. Preheat the air fryer to 400°F (200°C) for about 5 minutes.
  5. Arrange wings in a single layer in the air fryer basket without overcrowding; cook in batches if needed.
  6. Air fry wings at 400°F (200°C) for 20-25 minutes, flipping halfway through at around 12 minutes, until golden brown and crispy with an internal temperature of 165°F (74°C).
  7. While wings cook, melt 3 tablespoons unsalted butter in a small bowl.
  8. Stir in 1/4 cup hot sauce, 1/2 teaspoon garlic powder, and a pinch of cayenne pepper if desired; mix until smooth.
  9. In another bowl, combine 1/2 cup sour cream, 1/2 cup mayonnaise, 1/2 cup crumbled blue cheese, and 1 tablespoon lemon juice or vinegar.
  10. Season the dip with salt and black pepper to taste and mix gently but thoroughly.
  11. Once wings are cooked and crispy, transfer to a large bowl and toss with the buffalo sauce until evenly coated.
