Ingredients

Scale
  • Dill pickle slices (about 1 jar, recommended Claussen)
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • For the comeback sauce:
  • 1/2 cup mayonnaise
  • 2 tbsp ketchup
  • 1 tsp prepared horseradish
  • 1 tsp hot sauce (e.g., Frank’s RedHot)
  • 1 tsp Worcestershire sauce
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tbsp lemon juice or vinegar

Instructions

  1. Preheat your air fryer to 400°F (200°C) for about 5 minutes.
  2. Drain the dill pickle slices well and pat each slice dry thoroughly with paper towels to prevent sogginess.
  3. Set up three bowls: one with 1/2 cup all-purpose flour, one with 2 beaten eggs, and one with a mixture of 1 cup panko breadcrumbs, 1/4 cup grated Parmesan, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp smoked paprika, 1/2 tsp salt, and 1/4 tsp black pepper.
  4. Dredge each pickle chip first in flour, shaking off excess, then dip into the beaten eggs, letting excess drip off, and finally press into the breadcrumb mixture to coat fully. Use tongs for easier handling.
  5. Arrange the coated pickle chips in a single layer in the air fryer basket, avoiding overcrowding. Cook in batches if necessary.
  6. Air fry at 400°F (200°C) for 8 to 10 minutes, flipping the chips halfway through cooking. Add 1-2 more minutes if extra crispiness is desired, watching carefully to prevent burning.
  7. While the chips cook, whisk together the comeback sauce ingredients: 1/2 cup mayonnaise, 2 tbsp ketchup, 1 tsp prepared horseradish, 1 tsp hot sauce, 1 tsp Worcestershire sauce, 1/2 tsp garlic powder, 1/2 tsp onion powder, and 1 tbsp lemon juice in a small bowl. Adjust seasoning to taste.
  8. Serve the crispy dill pickle chips immediately with a generous side of the zesty comeback sauce.

Notes

Pat pickles dry thoroughly to prevent sogginess and help coating stick. Flip chips halfway through cooking for even crisping. Lightly spray air fryer basket with cooking oil if it tends to stick. The comeback sauce can be adjusted for spice level and tastes better after resting. For gluten-free, substitute flour and breadcrumbs accordingly. For dairy-free, replace Parmesan with nutritional yeast and use dairy-free mayo.
