This recipe delivers crispy, golden Brussels sprouts with a bright lemon zest flavor using an air fryer for quick and easy preparation. Perfect as a side dish that turns a humble vegetable into a crave-worthy snack.

Ingredients

Scale
  • 1 pound (450 grams) Brussels sprouts, trimmed and halved
  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon salt (kosher salt recommended)
  • ¼ teaspoon freshly ground black pepper
  • Zest of 1 medium lemon
  • Optional: pinch of red pepper flakes
  • Optional: sprinkle of grated Parmesan or nutritional yeast for dairy-free option

Instructions

  1. Rinse Brussels sprouts under cold water, trim stem ends, and slice each sprout in half lengthwise.
  2. Place halved sprouts in a mixing bowl. Drizzle with olive oil and sprinkle with salt and black pepper. Toss to coat evenly.
  3. Preheat air fryer to 375°F (190°C) for 3-5 minutes.
  4. Arrange Brussels sprouts in a single layer in the air fryer basket without overcrowding.
  5. Cook for 12-15 minutes, shaking or flipping halfway through at about 7 minutes, until edges are golden and crispy and centers are tender.
  6. Remove sprouts and immediately sprinkle with lemon zest. Toss gently to distribute.
  7. Serve immediately, optionally adding red pepper flakes or Parmesan before serving.

Notes

Ensure Brussels sprouts are dry before tossing with oil to maximize crispiness. Do not overcrowd the air fryer basket to avoid soggy spots. Shake or flip halfway through cooking for even browning. Add lemon zest immediately after cooking to release oils and enhance flavor. For reheating, use air fryer or oven to maintain crispiness; avoid microwaving.
