  • 1 tablespoon baking powder (aluminum-free)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 cup Frank’s RedHot Original
  • 1/4 cup unsalted butter, melted
  • 1 tablespoon honey
  • 1 teaspoon Worcestershire sauce
  • 1/3 cup honey
  • 2 tablespoons chipotle peppers in adobo, finely minced (about 2 peppers)
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon tomato paste
  • 1/2 teaspoon smoked paprika
  • Pinch of salt
  • Celery sticks (for serving)
  • Carrot sticks (for serving)
  • Ranch or blue cheese dressing (for serving)

Instructions

  1. Prep the wings: Pat the chicken wings completely dry with paper towels. Lay them out on a clean kitchen towel or paper towels and let them sit for 10 minutes while you preheat.
  2. Preheat the oven to 250°F (120°C).
  3. Season the wings: In a large bowl, combine the baking powder, salt, pepper, garlic powder, and smoked paprika. Add the dried wings and toss well to coat evenly.
  4. Arrange on the rack: Place a wire rack inside a rimmed baking sheet. Lay the wings out in a single layer, skin-side up, with a little space between each piece.
  5. Bake at 250°F for 30 minutes to render fat and dry the skin.
  6. Crank the heat to 425°F (220°C). Without removing the wings, let them come up to temperature with the oven. Bake for another 40-50 minutes, rotating the pan halfway through, until deep golden brown and skin is tight and bubbly.
  7. Check for doneness: Internal temperature should reach 165°F (74°C).
  8. While the wings bake, make the sauces: For buffalo sauce, combine hot sauce, melted butter, honey, and Worcestershire in a small saucepan over low heat. Whisk until smooth and warmed through. For honey-chipotle sauce, combine honey, minced chipotles, apple cider vinegar, tomato paste, smoked paprika, and salt in another small saucepan. Simmer over low heat for 5 minutes, stirring occasionally.
  9. Once wings are out of the oven, let them rest for 2-3 minutes. Divide between two bowls. Pour buffalo sauce over one batch and toss to coat. For honey-chipotle, brush on with a pastry brush or toss. Serve immediately with celery, carrots, and dip.

Don’t skip the 250°F drying step—it’s key for crispiness. Pat wings bone-dry before seasoning. Use aluminum-free baking powder to avoid bitter taste. If using a wire rack, don’t flip wings. Keep sauces warm before tossing. For extra crispiness, air-dry wings in fridge uncovered for 1 hour before baking.
