Crispy Baked Ham and Cheese Croissants

Buttery, flaky croissants filled with melted sharp cheddar and Swiss cheese and savory honey ham, baked until perfectly crispy. A quick and easy breakfast or brunch recipe that’s satisfying and crowd-pleasing.

  • 6 large store-bought or homemade croissants (day-old preferred)
  • 810 ounces thinly sliced honey ham or smoked ham
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded Swiss cheese
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon Dijon mustard (optional)
  • 1/2 teaspoon garlic powder
  • Freshly cracked black pepper, to taste
  • 1 tablespoon finely chopped fresh parsley (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Slice each croissant horizontally, leaving a hinge so the halves stay connected.
  3. In a bowl, combine shredded cheddar and Swiss cheese with garlic powder and black pepper.
  4. Spread a thin layer of Dijon mustard inside each croissant (optional).
  5. Layer 2-3 slices of ham inside each croissant, then add a generous handful of the cheese mixture.
  6. Close the croissants gently, pressing slightly to keep the filling snug.
  7. Brush melted butter over the tops (and sides if desired) of the croissants.
  8. Bake for 15-18 minutes until croissants are golden brown and cheese is melted and bubbling. Tent with foil if browning too fast.
  9. Remove from oven, sprinkle with chopped fresh parsley, and let cool for a couple of minutes before serving.

Notes

Use day-old croissants for a firmer, crispier texture. If croissants brown too quickly before cheese melts, tent loosely with foil. Butter generously for a golden crust. For dairy-free or vegan versions, substitute plant-based cheese and vegan butter. Leftovers reheat best in oven at 350°F for 8-10 minutes to maintain crispiness. Avoid microwaving to prevent sogginess.
