  • 1/2 cup all-purpose flour (or cornstarch for a lighter coating)
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • Salt and pepper, to taste
  • 1/3 cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha
  • 1 tsp honey (optional)
  • 1 tsp lime juice
  • Vegetable oil, for frying

Instructions

  1. Cut the salmon into bite-sized pieces and season lightly with salt and pepper.
  2. Set up a dredging station with three bowls: flour in the first, beaten eggs in the second, and panko breadcrumbs in the third.
  3. Dip each piece of salmon into the flour, then the egg, and finally the panko breadcrumbs, ensuring an even coating.
  4. Heat about 1 inch of vegetable oil in a large skillet over medium-high heat until shimmering.
  5. Carefully place the coated salmon pieces into the hot oil and fry for 2-3 minutes per side, or until golden brown and crispy. Work in batches to avoid overcrowding the pan.
  6. Remove the salmon bites with a slotted spoon and place them on paper towels to drain excess oil.
  7. In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and lime juice until smooth.
  8. Arrange the crispy salmon bites on a plate and drizzle with the bang bang sauce. Garnish with chopped green onions or sesame seeds if desired.
