Crispy Baseball Park Nachos

A quick and easy recipe for crispy nachos layered with gooey cheese and seasoned beef, perfect for game day or casual snacking.

  • Tortilla chips (sturdy, thick, store-bought restaurant-style)
  • 1 lb (450g) 80/20 ground beef
  • 1 cup (100g) shredded sharp cheddar cheese
  • 1 cup (100g) shredded Monterey Jack cheese
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt, to taste
  • Pepper, to taste
  • 1/4 tsp cayenne pepper
  • 1 finely chopped onion
  • 2 minced garlic cloves
  • 12 jalapeños, thinly sliced (fresh or pickled)
  • 1/2 cup (120 ml) canned black beans, rinsed and drained (optional)
  • 2 medium tomatoes, diced or 1 spoonful salsa
  • Handful of chopped cilantro
  • Sour cream or crema, for drizzling
  • 1 tbsp olive oil or butter

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Heat olive oil in a large skillet over medium heat. Sauté chopped onion and minced garlic until translucent, about 3-4 minutes.
  3. Add ground beef to the skillet, breaking it up with a spatula. Sprinkle chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, pepper, and cayenne. Cook until beef is browned and cooked through, about 7-8 minutes, stirring occasionally. If beef looks dry, add a splash of water or beef broth.
  4. While beef cooks, slice jalapeños, dice tomatoes, chop cilantro, and rinse black beans if using.
  5. Spread a generous layer of tortilla chips evenly on a baking sheet or oven-safe dish.
  6. Sprinkle half of the cooked beef over the chips, then half of the cheese blend.
  7. Add another layer of chips, then the remaining beef and cheese. Scatter jalapeños, black beans, and diced tomatoes on top.
  8. Bake in the oven for 8-10 minutes until cheese melts and bubbles and chips get extra crispy. Watch closely to prevent burning.
  9. Remove from oven and let cool for 2 minutes. Sprinkle chopped cilantro and add dollops of sour cream or crema.
  10. Serve immediately for best texture and flavor.

Notes

Use thick, sturdy chips to avoid sogginess. Layer cheese in two parts for better melt and adhesion. Keep an eye on the oven to prevent burning. Prepare toppings while beef cooks to save time. Serve immediately for best crunch. Reheat leftovers in oven to restore crispiness, avoid microwave reheating.
