A quick and easy holiday party appetizer featuring little smokies wrapped in bacon and coated with a caramelized brown sugar glaze for a sweet and savory bite.

  • 1 pound little smokies sausages
  • 8 slices thin-cut bacon, cut in half
  • ½ cup packed light brown sugar (about 100 g)
  • Pinch of ground black pepper
  • Optional: ¼ teaspoon chili powder or cayenne pepper
  • Cooking spray or parchment paper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a rimmed baking sheet with parchment paper or aluminum foil and lightly spray with cooking spray. If using a wire rack, place it on the baking sheet and spray as well.
  3. In a medium mixing bowl, combine the brown sugar, black pepper, and optional chili powder or cayenne pepper. Stir to blend.
  4. Add the little smokies to the bowl and toss gently until evenly coated with the brown sugar mixture.
  5. Wrap each sugar-coated smokie with a half slice of bacon, securing with a toothpick if needed.
  6. Arrange the wrapped smokies seam-side down on the prepared baking sheet or wire rack, spacing them slightly apart.
  7. Bake for 20-25 minutes, turning gently halfway through baking using tongs, until the bacon is crispy and the brown sugar is caramelized. Watch closely after 20 minutes to avoid burning.
  8. Remove from oven and let the smokies rest on the baking sheet for 5 minutes to allow the glaze to set before serving.

Notes

Use thin-cut bacon for faster crisping. Watch the sugar closely after 15 minutes to prevent burning. Turn smokies halfway through baking for even cooking. Resting after baking helps the glaze set and reduces stickiness. You can prep smokies ahead and refrigerate before baking. For thicker bacon, add 5 extra minutes to baking time and monitor closely.
