  • 1/2 cup buffalo sauce (e.g., Frank’s RedHot)
  • 4 oz cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • 1 tablespoon ranch seasoning mix (optional)
  • 2 tablespoons finely chopped green onions
  • 2 sheets puff pastry, thawed
  • 1 large egg, beaten (for egg wash)
  • Cooking spray or melted butter (to brush before baking)
  • Optional dip: blue cheese or ranch dressing

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or silicone mat.
  2. In a medium bowl, combine shredded chicken, buffalo sauce, cream cheese, cheddar cheese, ranch seasoning, and green onions. Mix until creamy and well incorporated. Add more buffalo sauce if too dry.
  3. On a lightly floured surface, gently roll out puff pastry sheets if desired. Cut each sheet into 6 equal squares (12 squares total).
  4. Spoon about 2 tablespoons of the buffalo chicken mixture into the center of each puff pastry square.
  5. Fold each square into a triangle or pouch shape and press edges firmly to seal completely.
  6. Brush each bomb lightly with beaten egg for a golden crust.
  7. Place bombs on prepared baking sheet with space between each. Bake for 18-20 minutes until puffed and golden brown.
  8. Let bombs cool for 5 minutes before serving. Serve warm with blue cheese or ranch dressing.

Notes

If puff pastry browns too quickly, tent with foil halfway through baking. Do not overfill pastry squares to avoid bursting. For gluten-free, use gluten-free dough or wonton wrappers. For dairy-free, substitute vegan cream cheese and dairy-free cheddar. Air fryer option: 375°F (190°C) for 12-15 minutes.
