  • 2 tablespoons lemon juice

  • 2 tablespoons grated Parmesan cheese (optional)
  • Salt and black pepper to taste
  • 1 large head of romaine lettuce, chopped
  • 1 cup croutons (gluten-free if preferred)
  • ½ cup grated Parmesan cheese (optional)
  • Chopped chives or parsley for garnish

Instructions

  1. Press the tofu: Place the block of tofu between two plates and weigh it down with a heavy object for 15-20 minutes to remove excess water.
  2. Cut and coat: Cut the pressed tofu into bite-sized cubes and toss them in cornstarch to coat evenly.
  3. Cook the tofu: Heat olive oil in a large skillet over medium-high heat. Add tofu cubes and cook for 8-10 minutes, flipping occasionally, until golden and crispy.
  4. Buffalo sauce magic: Transfer crispy tofu to a bowl and toss with Buffalo sauce until fully coated.
  5. Make the Caesar dressing: In a small bowl, whisk together mayonnaise, garlic, Dijon mustard, lemon juice, Worcestershire sauce, Parmesan cheese, salt, and pepper. Adjust seasoning as needed.
  6. Prepare the salad base: Chop romaine lettuce and place it in a large salad bowl. Add croutons and grated Parmesan cheese.
  7. Assemble the salad: Add Buffalo tofu to the salad bowl. Drizzle Caesar dressing over the top and toss everything together using tongs.
  8. Garnish and serve: Sprinkle chopped chives or parsley on top and serve immediately.
