  • 6 large eggs, hard-boiled and peeled
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • 2 tablespoons everything bagel seasoning
  • 2 tablespoons capers, drained
  • Salt and black pepper to taste
  • 1/2 teaspoon smoked paprika (optional)
  • 1 tablespoon chives, finely chopped

Instructions

  1. Place 6 large eggs in a medium pot and cover with cold water by about an inch. Bring to a rolling boil over medium-high heat, then cover and remove from heat. Let sit for 12 minutes, then transfer eggs to an ice bath to cool completely (about 10 minutes).
  2. Gently peel the eggs under running water to remove shells without tearing whites. Slice each egg in half lengthwise and carefully scoop out the yolks into a large bowl.
  3. Mash the yolks with 3 tablespoons mayonnaise, 1 teaspoon Dijon mustard, 1 teaspoon apple cider vinegar, salt, and pepper to taste. Mix until smooth and creamy. Add smoked paprika if using.
  4. Using a spoon or piping bag, fill each egg white half evenly with the yolk mixture.
  5. Generously sprinkle 2 tablespoons of everything bagel seasoning over each filled egg. Press lightly to help it adhere.
  6. Place 1-2 capers on top of each egg half.
  7. Preheat your oven’s broiler on high. Place the eggs on a rimmed baking sheet and broil for 3-5 minutes, watching carefully so they don’t burn.
  8. Let cool slightly, then sprinkle with chopped chives. Serve warm or at room temperature.

Notes

Use older eggs for easier peeling. Pat egg whites dry before topping to ensure crispiness. Watch broiler closely to avoid burning. Prepare filling ahead but add topping and broil just before serving. Almond flour can replace everything bagel seasoning for gluten-free crunch. Greek yogurt can substitute mayonnaise for lighter filling.
