  • ½ teaspoon salt (adjust to taste)
  • ¼ teaspoon freshly ground black pepper
  • 1 tablespoon lemon juice (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or place a wire rack on top.
  2. Peel and cut the potatoes into thin fries, about ¼ inch thick. Rinse them under cold water to remove excess starch and pat them dry thoroughly with a kitchen towel.
  3. In a large mixing bowl, toss the potato fries with olive oil, salt, and black pepper. Make sure each fry is coated evenly.
  4. Spread the fries out in a single layer on the baking sheet or wire rack. Bake for 25-30 minutes, flipping halfway through, until they’re golden and crispy.
  5. While the fries bake, mince or grate the garlic and crumble the feta cheese. Keep these ready for assembly.
  6. Once the fries are done, transfer them to a serving dish. Sprinkle the crumbled feta on top, followed by minced garlic and dried oregano.
  7. Drizzle with lemon juice if desired and serve immediately!
