  • 1 lb ground beef (80/20 preferred)
  • 3 medium russet potatoes (about 1.5 lbs), peeled and thinly sliced
  • 1 medium yellow onion, diced
  • 23 garlic cloves, minced
  • 2 tbsp olive oil
  • 1/2 cup beef broth
  • 1 tbsp Worcestershire sauce
  • Salt and black pepper to taste
  • 1 tsp dried thyme
  • 2 tbsp chopped fresh parsley
  • 1 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel and slice potatoes into 1/8-inch (3 mm) thin rounds. Rinse in cold water to remove excess starch, then pat dry. Toss with 1 tablespoon olive oil and a pinch of salt. Set aside.
  3. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add diced onions and cook until translucent, about 3-4 minutes. Stir in minced garlic and cook for another 30 seconds until fragrant.
  4. Add ground beef to the skillet, breaking it up with a spatula. Cook until evenly browned and no longer pink, about 7-8 minutes. Season with salt, pepper, and dried thyme while cooking.
  5. Pour in beef broth and Worcestershire sauce. Stir well, scraping up browned bits. Simmer for 2 minutes to reduce slightly. Remove from heat and stir in fresh parsley. Adjust seasoning if needed.
  6. Lightly grease a 9×13-inch baking dish. Layer half of the potato slices evenly on the bottom. Spread the cooked ground beef mixture over the potatoes.
  7. Layer the remaining potato slices on top of the beef. If using, sprinkle shredded cheddar cheese evenly over the top.
  8. Cover loosely with aluminum foil and bake for 35 minutes.
  9. Remove foil and bake uncovered for another 15-20 minutes until the top is golden and crispy and potatoes are tender.
  10. Let the casserole rest for 5-10 minutes before slicing and serving.

Notes

If the top browns too fast, cover loosely with foil to prevent burning. Uniformly slice potatoes for even cooking. Rest casserole before serving for cleaner slices. For a vegetarian version, substitute ground beef with plant-based crumbles or sautéed mushrooms and lentils, and use vegetable broth instead of beef broth.
