Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts, sliced into fry-sized strips
  • Zest and juice of 1 medium lemon (about 1 tablespoon juice)
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup whole wheat breadcrumbs (about 100 grams)
  • ¼ cup grated Parmesan cheese
  • 2 large eggs, beaten
  • Olive oil spray, for coating

Instructions

  1. Slice chicken breasts into fry-sized strips, about ¼ to ½ inch thick.
  2. In a small bowl, combine lemon zest, lemon juice, parsley, thyme, garlic powder, onion powder, salt, and black pepper to make the lemon herb seasoning.
  3. In a shallow bowl, mix whole wheat breadcrumbs with grated Parmesan cheese.
  4. Beat eggs in a separate bowl until smooth.
  5. Dip each chicken strip into the beaten eggs, then coat with the breadcrumb and Parmesan mixture, pressing gently to adhere.
  6. Sprinkle the lemon herb seasoning evenly over the coated chicken strips and toss gently to coat.
  7. Preheat the air fryer to 400°F (200°C) for 3-5 minutes.
  8. Lightly spray the air fryer basket with olive oil. Arrange chicken fries in a single layer without overlapping; cook in batches if necessary.
  9. Air fry at 400°F (200°C) for 10-12 minutes, flipping halfway through, until golden brown and cooked through (internal temperature 165°F / 74°C).
  10. Let the chicken fries rest for 2-3 minutes before serving to set the coating and maintain crispiness.

Notes

Pat chicken dry before coating to avoid soggy crust. Use olive oil spray lightly to help crispiness without excess oil. Flip fries halfway through cooking for even browning. Do not overcrowd the air fryer basket to ensure proper air circulation. Rest fries after cooking to maintain crunch. For gluten-free, substitute breadcrumbs with gluten-free options and omit Parmesan or use dairy-free cheese.
