A quick and easy air fryer recipe that turns mixed vegetables into a crispy, cheesy, and healthy snack or side dish with a golden Parmesan crust.

  • Mixed vegetables (broccoli florets, cauliflower, bell peppers, zucchini), cut into bite-sized pieces
  • 2 tablespoons olive oil
  • ½ cup grated Parmesan cheese (preferably Parmigiano-Reggiano)
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme)
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • Optional: red pepper flakes
  • Optional: lemon zest

Instructions

  1. Wash and dry the vegetables thoroughly. Cut into uniform bite-sized pieces (about 1 to 1½ inches).
  2. In a large mixing bowl, toss the vegetables with 2 tablespoons of olive oil until lightly and evenly coated.
  3. Add grated Parmesan, garlic powder, onion powder, dried Italian herbs, salt, and pepper. Toss gently to coat the veggies with the cheese and seasonings. Mix in optional red pepper flakes or lemon zest if using.
  4. Preheat the air fryer to 400°F (200°C) for about 3 minutes.
  5. Place the seasoned vegetables in a single layer in the air fryer basket, avoiding overcrowding.
  6. Cook for 12-15 minutes, shaking the basket or tossing the veggies with tongs halfway through cooking.
  7. If Parmesan browns too quickly, reduce temperature to 375°F (190°C) and continue cooking a few more minutes.
  8. Serve immediately for best crispness. Keep warm in a low oven (200°F/90°C) if needed, but note crispness will decrease over time.

Notes

Use fresh Parmesan cheese for best crispiness. Avoid overcrowding the air fryer basket to prevent soggy veggies. Toss halfway through cooking for even crisping. Leftovers can be reheated in the air fryer at 350°F for 3-5 minutes to restore crispness. For vegan option, substitute Parmesan with nutritional yeast or vegan cheese.
