  • 4 cups mini marshmallows
  • 6 cups Lucky Charms cereal
  • 1 teaspoon vanilla extract
  • Non-stick cooking spray (for greasing the pan)

Instructions

  1. Lightly grease a 9×13-inch pan with non-stick cooking spray or line it with parchment paper and set aside.
  2. In a large saucepan over low heat, melt 3 tablespoons of unsalted butter, about 2-3 minutes, avoiding browning.
  3. Add 4 cups of mini marshmallows to the melted butter and stir gently and continuously until fully melted and smooth, about 5 minutes.
  4. Remove from heat and stir in 1 teaspoon of vanilla extract.
  5. Immediately add 6 cups of Lucky Charms cereal to the melted marshmallow mixture and fold gently with a rubber spatula to coat the cereal without crushing the marshmallows.
  6. Pour the mixture into the prepared pan and press down evenly using a buttered spatula or lightly buttered hands, being careful not to press too hard, about 2-3 minutes.
  7. Let the treats cool completely at room temperature for at least 1 hour to firm up. Alternatively, refrigerate for 20-30 minutes for quicker setting.
  8. Once set, slice into squares or rectangles using a sharp knife lightly greased or warmed for clean cuts.

Melt butter and marshmallows over low heat to prevent burning. Fold cereal gently to keep marshmallows intact. Lightly butter hands or spatula when pressing mixture into pan to prevent sticking.
