These crispy puff pastry pizza bites are quick, easy, and perfect for parties. They combine flaky puff pastry with classic pizza toppings for a delicious, bite-sized appetizer.

  • 2 sheets puff pastry, thawed
  • 1/2 cup pizza sauce
  • 1 1/2 cups shredded mozzarella cheese
  • About 30 pepperoni slices (optional)
  • 1 tablespoon olive oil
  • 1 teaspoon dried Italian herbs (oregano and basil mix)
  • 1/4 cup grated Parmesan cheese
  • Salt and freshly ground black pepper, to taste
  • Optional add-ins: chopped olives, sliced mushrooms, fresh basil leaves

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Lightly flour your work surface and unfold the thawed puff pastry sheets. Gently roll them out to smooth any creases and get an even thickness around 1/4 inch (6 mm), about 5 minutes.
  3. Cut each puff pastry sheet into 24 squares (about 2-inch or 5 cm pieces).
  4. In a small bowl, combine olive oil with dried Italian herbs, salt, and pepper. Brush the edges of each puff pastry square with the herb-infused olive oil.
  5. Place about 1/2 teaspoon of pizza sauce in the center of each square. Sprinkle about 1 tablespoon of shredded mozzarella on top, then add a slice of pepperoni or your chosen add-in if using. Avoid overloading.
  6. Sprinkle a little grated Parmesan cheese over each bite.
  7. Bake in the preheated oven for 12-15 minutes until edges are puffed and golden brown and cheese is melted and bubbly.
  8. Let the bites cool on the baking sheet for 5 minutes before transferring to a serving platter.

Notes

Avoid overloading the pastry squares with sauce and cheese to prevent sogginess. Keep puff pastry cold but thawed for easier handling. Brush edges with herb-infused olive oil for better browning and flavor. Bake on middle rack and rotate pan if needed to avoid hot spots. Serve warm for best texture. Reheat in toaster oven for 5 minutes to restore crispness. For gluten-free or vegan versions, use appropriate puff pastry and cheese substitutes.
