  • ¼ cup freshly grated Parmesan cheese (about 25 grams)
  • ½ teaspoon garlic powder (optional)
  • ½ teaspoon sea salt, or to taste
  • Freshly ground black pepper, a pinch or two
  • 1 teaspoon lemon zest (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Trim the asparagus by snapping or cutting off the woody ends, about 1-2 inches from the bottom.
  3. In a mixing bowl, toss asparagus with olive oil until each stalk is well coated but not drenched.
  4. Add garlic powder, salt, and pepper; toss again to distribute seasonings evenly. Add lemon zest if desired.
  5. Arrange the asparagus in a single layer on a rimmed baking sheet, avoiding crowding.
  6. Roast for 12-15 minutes, flipping the asparagus halfway through (6-7 minutes) for even browning.
  7. Sprinkle Parmesan cheese evenly on the asparagus and return to the oven for 3-5 minutes until cheese melts and turns golden.
  8. Remove from oven and let cool for a minute to allow cheese to crisp further.
  9. Serve immediately, optionally adding extra lemon zest or a squeeze of fresh lemon juice.

Notes

Use fresh Parmesan for best melting and crisping. Avoid overcrowding the pan to prevent sogginess. Flip asparagus halfway through roasting for even cooking. If Parmesan browns too quickly, reduce oven temperature by 10-15°F. For thinner asparagus, reduce roasting time slightly. Leftovers can be reheated in a 375°F oven for 5-7 minutes to restore crispness; avoid microwaving.
