  • 1 pound (450g) fresh asparagus, trimmed
  • 68 thin slices prosciutto
  • 4 large eggs, room temperature
  • 1 tablespoon extra virgin olive oil
  • Freshly ground black pepper, to taste
  • Pinch of sea salt, if needed
  • Lemon zest from half a lemon (optional)
  • Chopped fresh herbs like chives or parsley for garnish (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Trim the asparagus by snapping off the woody ends and pat dry.
  3. Wrap each asparagus spear with a slice of prosciutto, spiraling from about an inch from the bottom up to cover most of the stalk.
  4. Arrange the wrapped asparagus on the prepared baking sheet in a single layer. Drizzle with olive oil and roll to coat evenly.
  5. Roast in the oven for 12-15 minutes, turning once halfway through, until prosciutto is crispy and asparagus is tender but bright green.
  6. While asparagus roasts, bring a medium saucepan of water to a gentle boil.
  7. Carefully lower 4 large eggs into boiling water using a slotted spoon. Set a timer for exactly 6 minutes.
  8. Prepare an ice bath. When timer goes off, transfer eggs immediately to ice bath to stop cooking.
  9. After 5 minutes in the ice bath, peel eggs gently.
  10. To serve, plate the crispy asparagus bundles and slice or halve the soft boiled eggs on top.
  11. Sprinkle with freshly ground black pepper, a pinch of sea salt if desired, and optional lemon zest or fresh herbs.
  12. Enjoy immediately while prosciutto is crisp and eggs are warm and creamy.

Notes

Pat asparagus dry before wrapping to ensure crispiness. If prosciutto isn’t crisping enough, broil for 1-2 minutes watching closely. Timing the eggs precisely at 6 minutes yields a creamy yolk. For variations, try grilling asparagus or substituting prosciutto with pancetta or turkey bacon.
