Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Trim the stem ends of the Brussels sprouts and slice each sprout in half lengthwise.
  3. Core and cut the apples into ½-inch thick wedges; peel if preferred.
  4. Cut the sausage links into 1½-inch pieces.
  5. In a large mixing bowl, combine the sausage pieces, Brussels sprouts, and apple wedges. Drizzle with olive oil and sprinkle garlic powder, smoked paprika, salt, pepper, and fresh thyme if using. Toss until lightly coated.
  6. Spread the mixture out in a single layer on a rimmed 18×13 inch sheet pan, leaving space between pieces to avoid steaming.
  7. Roast in the oven for 25-30 minutes, flipping everything halfway through (about 12-15 minutes) using tongs or a spatula.
  8. Check for doneness: sausage should reach an internal temperature of 160°F (71°C), Brussels sprouts should be tender with browned edges, and apples softened but holding shape.
  9. Serve immediately, optionally garnished with fresh parsley or a drizzle of balsamic glaze.

Do not overcrowd the pan to ensure crispiness. Use high heat (425°F) for caramelization. Flip halfway through roasting for even browning.
