Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease an 8×8-inch pan or line it with parchment paper.
  2. Crush the graham crackers into fine crumbs using a food processor or by smashing in a sealed bag until you have about 2 cups.
  3. In a medium bowl, combine crushed graham crackers, brown sugar, and a pinch of salt. Pour in melted butter and vanilla extract. Stir until evenly moistened and resembling wet sand.
  4. Press the mixture firmly into the bottom of the prepared pan to form a sturdy base.
  5. Bake the crust in the oven for 10 minutes until edges turn golden. Remove and let cool slightly.
  6. Sprinkle chocolate chips evenly over the warm crust.
  7. Evenly distribute mini marshmallows over the chocolate layer, packing gently but not squashing.
  8. Toast the marshmallows under the preheated broiler or with a kitchen torch until golden brown and puffed, about 1-3 minutes. Watch closely to avoid burning.
  9. Cool the bars for at least 15 minutes to set.
  10. Cut into squares with a sharp knife, wiping the knife between slices for cleaner cuts.
