A quick and easy breakfast casserole featuring crispy tater tots, smoky bacon, sharp cheddar, and fluffy eggs, perfect for busy mornings or feeding a crowd.

  • 8 to 10 slices bacon, cooked and chopped
  • 2 cups shredded sharp cheddar cheese
  • 8 large eggs
  • 1 cup milk or half-and-half
  • ½ cup finely chopped onion
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste
  • Optional: 1 tablespoon chopped fresh chives or parsley

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook bacon in a skillet over medium heat until crispy, about 8–10 minutes. Drain on paper towels and chop into bite-sized pieces.
  3. Using bacon fat or a bit of oil, sauté chopped onion until translucent and slightly golden, about 4 minutes.
  4. In a large bowl, whisk together eggs and milk or half-and-half until smooth and slightly frothy. Season with garlic powder, salt, and pepper.
  5. Gently fold sautéed onions, chopped bacon, and shredded cheddar cheese into the egg mixture.
  6. Spread frozen tater tots evenly in the bottom of a 9×13-inch baking dish.
  7. Pour the egg, cheese, bacon, and onion mixture over the tater tots, spreading gently to cover evenly.
  8. Bake for 40–45 minutes until eggs are set and the top is golden with crispy tater tots. If the top browns too fast, loosely cover with foil for the last 10 minutes.
  9. Let the casserole rest for 5 minutes before slicing. Garnish with fresh chives or parsley if desired.

Notes

Use frozen tater tots directly from the freezer to maintain crispiness. Partially cook bacon before adding to avoid sogginess. If the top browns too quickly, cover loosely with foil. The casserole can be assembled the night before and baked the next day with an additional 10 minutes baking time.
