  • 34 pounds beef chuck roast, trimmed of excess fat
  • 4 cups low-sodium beef broth
  • 1 large onion, thinly sliced
  • 4 cloves garlic, minced
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons soy sauce (optional)
  • 1 teaspoon dried thyme (or Italian seasoning)
  • Salt and pepper, to taste
  • 68 French rolls or hoagie buns, toasted
  • 68 slices provolone cheese

Instructions

  1. Trim excess fat from the chuck roast and season generously with salt and pepper.
  2. Add the sliced onion and minced garlic to the bottom of the crockpot. Place the seasoned roast on top.
  3. In a bowl, combine beef broth, Worcestershire sauce, soy sauce (if using), and dried thyme. Pour the mixture over the roast.
  4. Cover and cook on low for 8 hours or high for 4-5 hours, until the beef is tender and easily shreds with a fork.
  5. Remove the roast from the crockpot and shred it with two forks. Return the shredded beef to the broth to soak up the flavors.
  6. Slice the rolls in half and toast lightly in a toaster or oven at 375°F (190°C) for 5 minutes.
  7. Pile the shredded beef onto the bottom half of each roll and top with a slice of provolone cheese. Add the top half of the roll.
  8. Ladle the warm broth into small bowls for dipping and serve alongside the sandwiches.
