This Crockpot Potato Soup recipe is everything you want in a comforting meal: easy, rich, and satisfying. Perfect for busy weekdays or lazy weekends.

Ingredients

Scale
  • 2 lbs Russet potatoes, peeled and diced
  • 4 cups chicken broth
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 6 slices bacon, cooked and crumbled
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese, plus more for topping
  • Salt and pepper to taste
  • Optional toppings: chopped green onions, sour cream, extra bacon crumbles

Instructions

  1. Peel and dice the potatoes into bite-sized cubes. Chop the onion, mince the garlic, and cook the bacon until crispy. Crumble the bacon and set it aside.
  2. Place the diced potatoes, chopped onion, minced garlic, and chicken broth into the crockpot. Season with salt and pepper. Stir everything together.
  3. Cover and cook on high for 4 hours or low for 6-8 hours, until the potatoes are tender. You’ll know they’re ready when you can easily mash them with a fork.
  4. Use an immersion blender to puree the soup directly in the crockpot. If you prefer a chunkier texture, mash some potatoes with a potato masher while leaving others whole.
  5. Stir in the heavy cream and shredded cheddar cheese. Let it cook for another 15-20 minutes until the cheese is melted and the soup is creamy.
  6. Serve hot, topped with bacon crumbles, green onions, and a dollop of sour cream if desired.
