  • 1/2 cup (115g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 1/3 cup (35g) unsweetened cocoa powder
  • 1/2 cup (65g) all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • Fresh strawberries, medium-sized and hulled
  • 1 cup (175g) semi-sweet or dark chocolate chips
  • 1 tablespoon coconut oil or vegetable oil
  • Optional toppings: sea salt flakes, chopped nuts, sprinkles

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a medium bowl, whisk together the melted butter and sugar until smooth and glossy. Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract.
  3. In a separate bowl, sift together the cocoa powder, flour, salt, and baking powder.
  4. Gradually fold the dry ingredients into the wet mixture using a spatula until no flour streaks remain. The batter will be thick and fudgy.
  5. Using a mini ice cream scoop or spoon, scoop about 1 tablespoon (15g) of batter. Flatten it slightly in your palm, place a hulled strawberry in the center, and wrap the batter around it, sealing completely. Roll into a smooth ball. Repeat with remaining batter and strawberries.
  6. Place the brownie balls on the prepared baking sheet, spaced about 2 inches apart. Bake for 12-15 minutes until edges are set but centers are slightly soft.
  7. Let the brownie balls cool on the tray for 10 minutes, then transfer to a wire rack to cool completely, about 30 minutes.
  8. Melt the chocolate chips and coconut oil in a microwave-safe bowl in 20-second bursts, stirring between each, until smooth and shiny. Alternatively, melt over a double boiler.
  9. Dip each brownie ball into the melted chocolate using a fork or toothpick, coating fully. Let excess chocolate drip off and place back on parchment paper.
  10. While chocolate is still wet, sprinkle with optional toppings like sea salt flakes, chopped nuts, or sprinkles.
  11. Allow the chocolate to harden at room temperature or refrigerate for 15-20 minutes to set.
  12. Serve and enjoy.

Notes

Do not overbake to keep brownie bites gooey. Use a fork for dipping to keep hands clean. Chill brownie balls before dipping for best chocolate coating. Frozen strawberries can be used if thawed and dried thoroughly. Optional toppings like sea salt enhance flavor. Can be made vegan or gluten-free by substituting ingredients.
