Ingredients

Scale
  • 1 cup (120g) all-purpose flour
  • ½ cup (50g) unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup (100g) granulated sugar
  • ½ cup (100g) brown sugar
  • ½ cup (120ml) buttermilk
  • ½ cup (120ml) vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup (120ml) freshly brewed espresso (cooled)
  • 8 oz (227g) mascarpone cheese (softened)
  • 1 cup (240ml) heavy cream
  • ½ cup (60g) powdered sugar
  • 1 teaspoon vanilla extract
  • ¼ cup (60ml) espresso (for soaking)
  • Unsweetened cocoa powder (for dusting)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk the granulated sugar, brown sugar, buttermilk, vegetable oil, eggs, and vanilla extract until smooth.
  4. Gradually add the dry ingredients into the wet mixture, stirring gently until just combined. Avoid overmixing.
  5. Stir in the cooled espresso until the batter is smooth and slightly thick but pourable.
  6. Divide the batter evenly among the cupcake liners, filling each about ¾ full.
  7. Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean. Let the cupcakes cool completely.
  8. In a mixing bowl, beat the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Be careful not to overbeat.
  9. Brush the cooled cupcakes lightly with espresso to soak in the tiramisu flavor. Pipe the frosting on top of each cupcake.
  10. Dust the tops with cocoa powder using a fine mesh sieve.
