Ingredients

Scale
  • 2 ½ cups Oreo cookies, crushed (about 25 cookies)
  • 6 tablespoons unsalted butter, melted
  • 24 oz cream cheese, softened (three 8 oz packages)
  • 1 cup granulated sugar
  • ¾ cup sour cream, room temperature
  • 1 teaspoon vanilla extract
  • 3 large eggs, room temperature
  • ½ cup all-purpose flour
  • 1 cup crushed Oreos
  • 1 cup heavy cream
  • 1 cup semi-sweet chocolate chips
  • 1 teaspoon unsalted butter (for extra shine)

Instructions

  1. Preheat the oven to 325°F (163°C). Grease the bottom and sides of a 9-inch springform pan.
  2. Crush the Oreos into fine crumbs using a food processor or zip-top bag and rolling pin. Combine the crumbs with melted butter and press evenly into the bottom of the springform pan. Chill in the refrigerator while you prepare the filling.
  3. In a large bowl, beat the cream cheese and sugar together until smooth (about 2-3 minutes). Add the sour cream and vanilla extract, mixing until fully combined.
  4. Add the eggs one at a time, mixing on low speed after each addition to avoid overmixing. Once combined, fold in the flour and crushed Oreos using a spatula.
  5. Pour the filling over the chilled crust. Place the springform pan on a baking sheet, then place the baking sheet in the oven with about 1 inch of hot water to create a water bath. Bake for 55-60 minutes, or until the edges are set and the center jiggles slightly.
  6. Turn off the oven and let the cheesecake cool inside for 30 minutes. Remove it from the oven and cool completely at room temperature, then refrigerate for at least 6 hours or overnight.
  7. Heat the heavy cream in a small saucepan until just simmering. Remove from heat and pour over the chocolate chips in a heatproof bowl. Stir until smooth, then add butter for shine.
  8. Pour the ganache over the chilled cheesecake, spreading it evenly with a spatula. Let it set for 15-20 minutes before serving.
