These decadent red velvet protein bars combine the irresistible flavor of classic red velvet cake with the satisfying chewiness of a protein-packed snack. Perfect for meal prep and easy snacking!

  • 1 cup (100g) oat flour (ground rolled oats or quick oats)
  • 1/2 cup almond flour (or coconut flour for nut-free option)
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup protein powder (vanilla or chocolate)
  • 1 teaspoon baking powder
  • 1 tablespoon beet powder or red food coloring
  • Pinch of salt
  • 1/2 cup plain Greek yogurt (or dairy-free yogurt)
  • 2 tablespoons cream cheese (optional, or dairy-free alternative)
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. Grind rolled oats into a fine flour using a food processor or blender if not using pre-ground oat flour.
  3. In a large bowl, mix oat flour, almond flour, cocoa powder, protein powder, baking powder, beet powder (or food coloring), and a pinch of salt.
  4. In a separate bowl, whisk together Greek yogurt, honey or maple syrup, vanilla extract, and cream cheese until smooth.
  5. Gradually add the wet mixture to the dry ingredients, stirring until fully combined. The batter should be thick but spreadable.
  6. Spread the batter evenly into the prepared baking pan using a spatula.
  7. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let the bars cool completely in the pan before slicing into squares or rectangles.
