These silky smooth salted dark chocolate ganache truffles offer a perfect balance of rich chocolate and a subtle crunch of sea salt, making an easy and luxurious homemade treat.

  • ½ cup (120 ml) heavy cream
  • 2 tbsp (28 g) unsalted butter, softened
  • ½ tsp sea salt flakes, plus extra for sprinkling
  • 1 tsp vanilla extract
  • Optional: cocoa powder for dusting
  • Optional: chopped nuts or toasted coconut for rolling

Instructions

  1. Chop the chocolate finely into small, uniform pieces (about 5 minutes).
  2. Heat the heavy cream in a small saucepan over medium heat until it begins to simmer gently, avoiding boiling (3-4 minutes).
  3. Pour the hot cream over the chopped chocolate in a heatproof bowl and let sit undisturbed for 2 minutes to soften the chocolate.
  4. Stir gently with a whisk or spatula until smooth and glossy. Add softened butter, vanilla extract, and sea salt flakes, stirring until fully incorporated (3 minutes).
  5. Cover the bowl with plastic wrap and chill in the refrigerator for at least 2 hours until firm.
  6. Scoop portions of ganache using a melon baller or teaspoon and quickly roll between palms to form smooth balls (15 minutes).
  7. Roll the truffles in cocoa powder, sea salt flakes, or chopped nuts for coating and place on a parchment-lined baking sheet (10 minutes).
  8. Refrigerate the coated truffles for another 30 minutes to set.

Notes

Chill the ganache thoroughly before rolling to prevent stickiness. Use parchment paper to avoid chocolate sticking. If ganache softens while rolling, refrigerate for 10-15 minutes. Keep hands cool and dry when shaping truffles. For vegan option, substitute heavy cream with full-fat coconut cream and use vegan dark chocolate.
