Instructions

  1. Prepare the Crust: In a medium bowl, mix 1 ½ cups graham cracker crumbs, 5 tablespoons melted butter, and 2 tablespoons sugar until the crumbs are evenly coated and hold together when pressed. Press this mixture firmly into the bottom of your dome mold or cake pan. Set aside in the fridge to chill while preparing the filling. (This step takes about 10 minutes.)
  2. Make the Strawberry Layer: In a small bowl, combine 1 cup finely chopped strawberries, 2 tablespoons strawberry jam, and 1 tablespoon lemon juice. Stir gently, then set aside to let the flavors meld for 10 minutes.
  3. Prepare the Cheesecake Filling: In a large mixing bowl, beat 16 oz softened cream cheese with ½ cup sugar until smooth and creamy—no lumps! Add 1 teaspoon vanilla extract and 2 teaspoons rose water, mixing well to combine. Then, beat in 2 eggs one at a time, ensuring each is fully incorporated before adding the next. Finally, fold in ½ cup sour cream gently, just until combined.
  4. Assemble the Dome: Pour about half of the cheesecake filling over the chilled crust in the mold, smoothing it out evenly. Spoon the strawberry mixture carefully over this layer, spreading gently but evenly. Then, cover with the remaining cheesecake filling, smoothing the top with a spatula.
  5. Chill: Cover the dome tightly with plastic wrap and refrigerate for at least 6 hours, preferably overnight.
  6. Serve: When ready, gently unmold the dome onto a serving plate. Decorate with fresh strawberry slices, edible rose petals, and a light dusting of powdered sugar.

Notes

Use room temperature cream cheese and eggs to avoid lumps. Chill the dome overnight for best results. Warm hands or a warm damp cloth help unmold the dome smoothly. Use a hot, clean knife dipped in hot water for neat slices. Rose water is potent; start with 2 teaspoons and adjust to taste. For gluten-free crust, substitute graham crackers with almond flour and butter. For dairy-free, use vegan cream cheese and coconut cream.
