Delicious S’mores Cookie Bites

These bite-sized treats combine buttery cookie dough, melty chocolate, and toasted marshmallows for a nostalgic and delicious dessert.

  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup graham crackers, crushed
  • 1 cup mini marshmallows
  • 1 cup milk chocolate chips
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, crushed graham crackers, and salt. Set aside.
  3. In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
  4. Mix in the eggs one at a time, followed by the vanilla extract. Scrape the sides of the bowl to ensure everything is incorporated.
  5. Gradually add the dry mixture to the wet mixture, stirring until just combined. Avoid overmixing.
  6. Gently stir in the chocolate chips and mini marshmallows.
  7. Use a cookie scoop or tablespoon to portion out dough balls onto the prepared baking sheets, leaving about 2 inches between each.
  8. Bake for 10-12 minutes, or until the edges are lightly golden and the marshmallows are puffed and slightly browned.
  9. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a cooling rack.
