Instructions

  1. Rinse and pat dry the chicken breasts. Pound gently if uneven in thickness to ensure even cooking.
  2. In a mixing bowl, combine uncooked rice, onion soup mix, and frozen mixed vegetables. Stir to distribute seasoning evenly.
  3. Pour chicken broth into the bottom of the slow cooker. Add the rice and vegetable mixture on top of the broth.
  4. Place the chicken breasts gently on top of the rice mixture, pressing down slightly so they are nestled but not submerged.
  5. Cover and cook on low for 4 to 6 hours. Check rice texture around 4 hours and cook longer if needed.
  6. Once cooked, stir gently to combine flavors. Adjust seasoning with salt or pepper if desired.
  7. Serve warm, optionally garnished with fresh parsley or a squeeze of lemon.
