  • 1 cup shredded cheddar cheese (sharp cheddar adds the best flavor)
  • 1/4 cup crumbled blue cheese (optional)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1 package (about 50) wonton wrappers
  • 2 tablespoons melted butter
  • Optional: extra shredded cheddar for topping

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease your muffin tin with non-stick spray or a little oil.
  2. Make the filling: In a large mixing bowl, beat the softened cream cheese with a hand mixer until it is smooth and fluffy, about 2 minutes. Scrape down the sides of the bowl once or twice. Add the buffalo wing sauce, ranch dressing, garlic powder, and onion powder. Mix until everything is well combined and the color is a uniform pale orange.
  3. Add the chicken and cheese: Fold in the shredded chicken, 3/4 cup of the shredded cheddar cheese, and the crumbled blue cheese (if using). Stir until the chicken is evenly coated. The mixture should be thick and scoopable, not runny. If it looks too thin, add a little more shredded cheese to tighten it up.
  4. Assemble the bites: Take one wonton wrapper and gently press it into a cup of the muffin tin. Push it down so the bottom touches the tin and the edges fan out slightly. Spoon about 1 to 1.5 tablespoons of the filling into each wrapper. Do not overfill.
  5. Top with cheese: Sprinkle a little of the remaining shredded cheddar cheese on top of each bite.
  6. Brush with butter: Use a pastry brush to lightly coat the exposed edges of the wonton wrappers with melted butter.
  7. Bake: Place the muffin tin on a baking sheet to catch any potential drips. Bake for 12 to 15 minutes, or until the wonton edges are golden brown and crispy, and the filling is hot and bubbly.
  8. Cool slightly: Let the bites cool in the pan for 3 to 5 minutes. Use a butter knife or small spatula to gently lift them out of the tin.
