A quick and easy breakfast casserole combining crispy hashbrowns, savory sausage, and melted cheddar cheese, perfect for busy mornings and family gatherings.

  • 30 oz frozen shredded hashbrowns (about 850 g)
  • 1 pound breakfast sausage (mild or spicy, ground pork or turkey)
  • 2 cups shredded cheddar cheese (about 200 g)
  • 6 large eggs, room temperature
  • 1 cup milk (whole or 2%)
  • 1 medium onion, finely diced
  • 2 cloves garlic, minced (optional)
  • 1 teaspoon salt
  • ½ teaspoon black pepper, freshly ground
  • ½ teaspoon paprika
  • Butter or cooking spray for greasing the baking dish

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or cooking spray.
  2. In a large skillet over medium heat, crumble and brown the sausage for 6-8 minutes until no longer pink. Drain excess fat if necessary.
  3. Add diced onion and minced garlic to the skillet with the sausage. Cook for 3-4 minutes until softened and fragrant, onions translucent but not browned.
  4. In a large mixing bowl, combine the frozen shredded hashbrowns with the cooked sausage, onion, and garlic mixture.
  5. Stir in 1 ½ cups of shredded cheddar cheese to the hashbrown and sausage mixture, reserving ½ cup for topping.
  6. In a separate bowl, whisk together eggs, milk, salt, black pepper, and paprika until smooth and slightly frothy.
  7. Pour the egg mixture over the hashbrowns, sausage, and cheese. Gently fold everything together with a spatula to distribute the custard evenly without breaking the potatoes.
  8. Spread the mixture evenly into the prepared baking dish. Sprinkle the reserved ½ cup of cheddar cheese evenly over the top.
  9. Bake for 45-50 minutes until the casserole is set in the center and the top is golden brown and bubbly. Test doneness by inserting a knife in the center; it should come out clean.
  10. Let the casserole cool for about 10 minutes before slicing and serving.

Notes

Do not thaw the hashbrowns to keep texture crispy. Brown sausage thoroughly to reduce grease. Let casserole rest before cutting for cleaner slices. Tent with foil if edges brown too quickly.
