Easy Cinnamon Sugar Donut Muffins

  • 1 ½ cups (190g) all-purpose flour
  • ½ cup (100g) granulated sugar
  • 1 ½ teaspoons (6g) baking powder
  • ¼ teaspoon (1g) salt
  • ½ cup (120ml) whole milk
  • ¼ cup (60g) melted unsalted butter
  • 1 large egg
  • 1 teaspoon (5ml) vanilla extract
  • ½ cup (100g) granulated sugar (for coating)
  • 1 teaspoon (3g) ground cinnamon (for coating)

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a muffin tin with butter or non-stick spray.
  2. In a large bowl, whisk together flour, granulated sugar, baking powder, and salt.
  3. In a separate bowl, whisk milk, melted butter, egg, and vanilla extract until smooth.
  4. Gradually add the wet mixture to the dry ingredients, stirring until just combined. Do not overmix.
  5. Divide the batter evenly among the muffin cups, filling each about ¾ full.
  6. Bake for 15-18 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean.
  7. While the muffins are baking, mix granulated sugar and ground cinnamon in a small bowl.
  8. Once the muffins have cooled for 5 minutes, brush their tops with melted butter and roll them in the cinnamon sugar mixture until fully coated.
